In The Cellar
After destalking and crushing the mash was flash pasteurized to 85°C and then immediately cooled to 24°C. The mash was then inoculated with a selected yeast strain and fermented to 2° Balling. The wine was then pressed sweetened to 210g/l sugar, using cane sugar. The wine was stabilized, filtered and bottled in March 2011.
